    How long does kale stay fresh?

    I bought some kale the other day and when I got home I removed the stems and put all the leaves in a ziplock bag - it was A LOT! Do I really have to eat it all within a few days? Usually with spinach or romaine it will stay fresh for a full week.

    i'd say our kale usually lasts for a week or so in the fridge.
    There is no nice leather, there is no humane fur, and there is no downhill from rock bottom.

    I usually don't take the stems out until right before I cook 'em. I think they last a little longer that way. Also, you might want to leave a small opening in the ziplock bag. Seems counterintuitive, but it seems fresh veggies need to 'breathe' or something. If all the moisture is trapped in it'll get wilty sooner. But kale is pretty sturdy ... I agree w LuC, it should last about a week.

    You could also parboil it and freeze it. Or would that be blanch? Either way, briefly boil, run under cold water and freeze.

    For storage, in addition to leaving the bag a little open, I also try not to compress it and I tuck in a napkin to help absorb excess moisture.

    Not so much airy as only closed loosely and not compressed. My routine - get home from store, remove kale from produce bag, shake over sink to remove excess water (change bag if it's really bad), put napkin or two in bottom of bag, put kale back in, loosely twist top of bag (usually kale stems are long enough to stick out which prevents the bag from being totally closed), refrigerate.
